Instant Sweetcorn Handvo Bites
Ingredients
- 2 raw sweetcorn
- 1/4 cup shredded carrot
- 2-3 tablespoons finely chopped French beans
- 2-3 tablespoons finely chopped capsicum
- 1 large onion, finely chopped
- A few cloves garlic, finely chopped
- Fresh coriander, finely chopped
- 1/2 teaspoon turmeric powder
- 2 teaspoons Kashmiri red chili powder
- 2 teaspoons coriander powder
- 1 teaspoon kitchen king masala
- Salt to taste
- 1/2 teaspoon asafoetida
- 1/4 cup cooked rice or rice flour
- 3/4 cup semolina
- 1/2 cup gram flour
- 1/2 cup sour curd
- 3-4 tablespoons water, as needed
- 1 packet fruit salt
- Oil for cooking
- Mustard seeds
- Sesame seeds
Preparation
Take 2 raw sweetcorn and remove the kernels
Crush half of the kernels coarsely and leave the remaining half whole
In a bowl, combine the crushed and whole sweetcorn kernels
Add 1/4 cup shredded carrot, 2-3 tablespoons finely chopped French beans, 2-3 tablespoons finely chopped capsicum, 1 large finely chopped onion, a few finely chopped garlic cloves, and finely chopped fresh coriander
Mix everything well
Add 1/2 teaspoon turmeric powder, 2 teaspoons Kashmiri red chili powder, 2 teaspoons coriander powder, 1 teaspoon kitchen king masala, and salt to taste
Then add 1/2 teaspoon asafoetida
For binding, add 1/4 cup cooked rice or rice flour, 3/4 cup semolina, and 1/2 cup gram flour
Mix everything well, then add 1/2 cup sour curd and 3 to 4 tablespoons water gradually, being careful as vegetables may release water
Just before cooking, add 1 packet of fruit salt and mix
Heat an appe pan on medium flame
Add oil to each cavity, along with a few mustard seeds and some sesame seeds
Once the seeds crackle, add the handvo batter to each cavity
Cook the handvo on slow to medium flame until golden on each side
Tips
Enjoy the sweetcorn handvo bites with tomato coriander chutney or any dip of choice
