Sweet Potato Toast with Hummus, Red Cabbage and Basil

Ingredients

  • sweet potato
  • hummus
  • red cabbage
  • chickpeas
  • fresh basil
  • salt
  • ground pepper
  • pinch of hot paprika

Preparation

  1. Slice the sweet potato into 1/4 inch slices and bake at 350°F for 10 minutes on each side.

  2. Top with hummus, shredded red cabbage, chickpeas, and fresh basil leaves.

  3. Add salt, ground pepper, and a pinch of hot paprika.
