Buddha Bowl with Beets and Chickpeas

Ingredients

  • rice
  • fresh basil
  • beets
  • chickpeas
  • salt
  • paprika

Preparation

  1. Cook rice according to package instructions

  2. Fry basil until fragrant and mix with rice

  3. Roast beets in the oven until tender at around 400°F

  4. Roast chickpeas at 420 degrees Fahrenheit for 15-20 minutes with salt and paprika, flipping halfway through

  5. Assemble all ingredients in a bowl
