Buddha Bowl with Beets and Chickpeas
Ingredients
- rice
- fresh basil
- beets
- chickpeas
- salt
- paprika
Preparation
Cook rice according to package instructions
Fry basil until fragrant and mix with rice
Roast beets in the oven until tender at around 400°F
Roast chickpeas at 420 degrees Fahrenheit for 15-20 minutes with salt and paprika, flipping halfway through
Assemble all ingredients in a bowl
