Our Lentil Soup with Green Salad

Ingredients

  • 2 tbs of olive oil
  • 1 1/2 tsp of minced garlic
  • 1 cup of chopped yellow onion
  • 3/4 cup of chopped celery
  • 1 1/4 cup of chopped carrots
  • 8 cups of filtered water
  • 2 1/2 cups of green lentils
  • 2 bay leaves
  • 2 tsp of pink himalayan salt
  • 1/4 tsp of black pepper
  • 2 1/4 cup of vine ripe tomatoes blended
  • 1 1/4 tsp of paprika
  • 1/4 tsp of cumin
  • 2 tbs of balsamic vinegar
  • 1 tbs of all-purpose flour

Preparation

  1. In a large pot on medium heat add olive oil, garlic, and onion, cook until fragrant

  2. Next add celery and carrots, cook for a few minutes, then pour in water along with lentils, bay leaves, salt, and pepper, simmer for 60 minutes

  3. Once time is up add in tomatos, paprika, and cumin, stir well and simmer for 10 minutes

  4. When time is up add balsamic vinegar and slowly sprinkle in flour stirring as you add, cook for another 10 minutes

  5. When finished remove bay leaves, garnish with fresh chopped parsely and enjoy???? #threebunnies
