5-Ingredient Oatmeal Caramel Cups

Ingredients

  • 1 cup rolled oats
  • 1 mashed banana
  • 1/3 cup smooth peanut butter
  • 8 Medjool dates, pitted
  • 50g dark chocolate, melted

Preparation

  1. In a medium bowl, combine rolled oats and mashed banana and peanut butter and mix until the oats are well-coated and the mixture is evenly combined

  2. Line a muffin tray with paper liners

  3. Press about 1-2 tablespoons of the oat mixture into the bottom and up the sides of each muffin cup to form a cup shape

  4. Place pitted Medjool dates in a food processor and blend until a smooth, thick paste forms, adding a small amount of warm water one teaspoon at a time if needed to help blend smoothly

  5. Spoon about a tablespoon of the date caramel into each oat cup, spreading it evenly

  6. Drizzle or spoon melted dark chocolate over the top of each cup

  7. Place the muffin tin in the refrigerator for about 20 minutes or until the chocolate has set
