Apple + Walnut Baked Oats

Ingredients

  • 2.5 cups whole oats
  • 2 tbsp. melted coconut oil
  • 2 tbsp. chia seeds
  • 2 tbsp. almond meal or flaxseed meal
  • 2 tbsp. maple syrup
  • 1/2 tsp. sea salt
  • 1 tsp. ground cinnamon
  • 2 cups of coconut or nut milk
  • 1 cup of chopped walnuts (sub for any nuts you have)
  • 3 tbsp. pnb
  • 1 tsp. vanilla bean paste or pure vanilla extract

Preparation

  1. Preheat oven to 180 Celsius • Place all dry ingredients in a large bowl and mix evenly. Then add all the remaining ingredients and stir through until mixed well

  2. Let the mixture sit in the bowl for 5 minutes so the chia seeds can coagulate. If it seems a little dry add in a dash more milk or water

  3. Line a loaf tin with baking paper and pour the mixture, press evenly and into the sides

  4. If you have additional apple moons, layer/overlap over the center or even all over & sprinkle with additional cinnamon. • Bake in preheated over for 35-45 minutes or until the loaf has come away from the edges of dish and the topping is golden. • Remove from oven and sit for 10 minutes

  5. Serve warm with warmed nut milk + additional toppings

  6. Enjoy
