Apple + Walnut Baked Oats
Ingredients
- 2.5 cups whole oats
- 2 tbsp. melted coconut oil
- 2 tbsp. chia seeds
- 2 tbsp. almond meal or flaxseed meal
- 2 tbsp. maple syrup
- 1/2 tsp. sea salt
- 1 tsp. ground cinnamon
- 2 cups of coconut or nut milk
- 1 cup of chopped walnuts (sub for any nuts you have)
- 3 tbsp. pnb
- 1 tsp. vanilla bean paste or pure vanilla extract
Preparation
Preheat oven to 180 Celsius • Place all dry ingredients in a large bowl and mix evenly. Then add all the remaining ingredients and stir through until mixed well
Let the mixture sit in the bowl for 5 minutes so the chia seeds can coagulate. If it seems a little dry add in a dash more milk or water
Line a loaf tin with baking paper and pour the mixture, press evenly and into the sides
If you have additional apple moons, layer/overlap over the center or even all over & sprinkle with additional cinnamon. • Bake in preheated over for 35-45 minutes or until the loaf has come away from the edges of dish and the topping is golden. • Remove from oven and sit for 10 minutes
Serve warm with warmed nut milk + additional toppings
