Avocado Stuffed Hasselback Sweet Potato Meal
Ingredients
- 1 medium sweet potato
- Coconut oil
- 1 avocado
- Cholula hot sauce (optional)
- Sesame seeds (optional)
- Chili flakes (optional)
Preparation
Cut slits in a medium sweet potato, about 4/5 of the way through without cutting it apart, and brush with coconut oil.
Microwave on high for 6-8 minutes or roast in the oven until softened.
Halve an avocado, remove the pit, peel the skin, place cut-side-down and cut into thin slices, then wedge the slices into the roasted sweet potato.
Sprinkle with your favorite toppings, such as Cholula, sesame seeds, and chili flakes.
