Avocado Stuffed Hasselback Sweet Potato Meal

Ingredients

  • 1 medium sweet potato
  • Coconut oil
  • 1 avocado
  • Cholula hot sauce (optional)
  • Sesame seeds (optional)
  • Chili flakes (optional)

Preparation

  1. Cut slits in a medium sweet potato, about 4/5 of the way through without cutting it apart, and brush with coconut oil.

  2. Microwave on high for 6-8 minutes or roast in the oven until softened.

  3. Halve an avocado, remove the pit, peel the skin, place cut-side-down and cut into thin slices, then wedge the slices into the roasted sweet potato.

  4. Sprinkle with your favorite toppings, such as Cholula, sesame seeds, and chili flakes.
