Avocado Stuffed Hasselback Sweet Potato

Ingredients

  • 1⃣ Cut slits in a medium sweet potato (4/5 of the way through, do not cut the sweet potato apart). Brush with coconut oil
  • 2⃣ Microwave on high for 6-8 minutes, or roast until softened in the oven
  • 3⃣ Halve an avocado, remove the pit, gently peel away the skin. Put cut-side-down, cut into thin slices. Wedge the avocado slices into the roasted sweet potato
  • 4⃣ Sprinkle with your favorite toppings, I enjoy Cholula, sesame seeds and chili flakes
