Bliss Balls: Pink Pitaya Bombs

Ingredients

  • • 200ml tin of coconut milk
  • • 2 tbsp coconut oil
  • • 1 tbsp coconut honey
  • • 200g desiccated coconut
  • • 3 tsp pink pitaya powder
  • • 200g dark chocolate, melted

Preparation

  1. Melt your coconut milk, oil, and honey together

  2. Mix them with the desiccated coconut and pink pitaya powder

  3. Line a baking tray with parchment paper

  4. Roll the mixture into small balls and then start assembling them on the baking tray

  5. Pop the tray into the freezer to set for 10 minutes

  6. Dip your pitaya balls in a bowl of melted chocolate

  7. Pop them back into the freezer for 20 minutes
