Caramel Macchiato Mug Cake

Ingredients

  • 5 tbsp almond flour
  • 3 tbsp coconut sugar
  • 1 egg
  • 1 tbsp brewed coffee, cooled
  • 1 tbsp coconut oil, melted
  • pinch of cinnamon

Toppings

  • 1 tbsp vegan butter
  • 2-3 tbsp coconut sugar
  • 1 tbsp coconut cream
  • vanilla extract
  • @planetoat dairy free vanilla ice cream

Preparation

  1. Combine the mug cake ingredients together.

  2. Transfer the mixture to a mug.

  3. Microwave for 1 minute.

  4. For the caramel sauce, heat 1 tbsp vegan butter, 2-3 tbsp coconut sugar, 1 tbsp coconut cream, and vanilla extract over medium heat until fully combined.

  5. Top the mug cake with dairy-free vanilla ice cream and the caramel sauce.
