Ingredients

  • Coconut rice
  • Green banana
  • Plantain
  • Cho cho (chayote)
  • Chickpeas
  • Dumplings
  • Butternut squash
  • Kidney beans
  • Avocado

Preparation

  1. Prepare coconut rice.

  2. Boil green banana until tender.

  3. Fry plantain until golden.

  4. Bake cho cho until soft.

  5. Roast chickpeas with Cajun seasoning.

  6. Pan fry dumplings until crispy.

  7. Cook spiced butternut squash.

  8. Simmer kidney bean and plantain stew with seasonings.

  9. Slice avocado.

Assembly

  1. Combine all components in a bowl and serve.
