Cauliflower Crust Pizza

Ingredients

  • herby hummus
  • 2 fat garlic cloves (roasted in a bit of olive oil)
  • tin of cooked chickpeas
  • 3 tbsp. tahini
  • pinch of dried chilli flakes
  • good quality olive oil
  • large handful fresh parsley, chopped
  • small handful fresh dill, chopped
  • a few basil leaves, torn
  • sea salt
  • black pepper

Preparation

  1. Combine the beans, roasted garlic, tahini, lemon juice and chilli flakes in a food processor and pulse until a thick, chunky spread forms

  2. Pour in the olive oil a little at a time until the dip is the consistency that you like

  3. I often add a little water or extra tahini to loosen it at this stage

  4. Add the herbs and a pinch of salt and pepper to the hummus

  5. Pulse briefly to combine then taste for seasoning
