Cauliflower Crust Pizza
Ingredients
- herby hummus
- 2 fat garlic cloves (roasted in a bit of olive oil)
- tin of cooked chickpeas
- 3 tbsp. tahini
- pinch of dried chilli flakes
- good quality olive oil
- large handful fresh parsley, chopped
- small handful fresh dill, chopped
- a few basil leaves, torn
- sea salt
- black pepper
Preparation
Combine the beans, roasted garlic, tahini, lemon juice and chilli flakes in a food processor and pulse until a thick, chunky spread forms
Pour in the olive oil a little at a time until the dip is the consistency that you like
I often add a little water or extra tahini to loosen it at this stage
Add the herbs and a pinch of salt and pepper to the hummus
Pulse briefly to combine then taste for seasoning
