Vegan Beetroot Hummus Dip
Ingredients
- 1 can chickpeas, drained
- 1 clove garlic
- 1/4 cup tahini
- 1 cup roasted or steamed beetroot (fork tender)
- 1 tablespoon lemon juice
- 1/2 teaspoon sea salt (or to taste)
Preparation
Drain and rinse the chickpeas
Peel the garlic clove if necessary
Combine all ingredients in a blender or food processor and blend until smooth
Adjust seasoning or add olive oil if needed for consistency
