Vegan Beetroot Hummus Dip

Ingredients

  • 1 can chickpeas, drained
  • 1 clove garlic
  • 1/4 cup tahini
  • 1 cup roasted or steamed beetroot (fork tender)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon sea salt (or to taste)

Preparation

  1. Drain and rinse the chickpeas

  2. Peel the garlic clove if necessary

  3. Combine all ingredients in a blender or food processor and blend until smooth

  4. Adjust seasoning or add olive oil if needed for consistency
