Celery Root Salad

Ingredients

  • for salad:
  • 2 boneless skinless grilled chicken breasts
  • 1 celery root, spiralized
  • 2 romaine hearts, chopped
  • 12 bunches mâche greens (can sub watercress or spinach)
  • 1 granny smith apple, 1/2
  • juice of 1 lemon
  • 3/4 oz. walnuts, chopped
  • 1 tsp sea salt
  • for dressing:
  • 1 tbsp whole grain mustard
  • 1 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tsp chives, chopped
  • salt and pepper

Preparation

  1. In a medium bowl, whisk together the dressing ingredients

  2. Spiralize celery root (blade C on the Inspiralizer). Boil for 1 minute.  Transfer to a colander, rinse under cold water, and leave in colander to drain
