Celery Root Salad with Apples, Walnuts, and Mustard Vinaigrette

Ingredients

Salad

  • 2 boneless skinless chicken breasts
  • 1 celery root
  • 2 romaine hearts
  • 12 bunches mâche greens (can sub watercress or spinach)
  • 1 Granny Smith apple
  • Juice of 1 lemon
  • 3/4 oz. walnuts
  • 1 tsp sea salt

Dressing

  • 1 tbsp whole grain mustard
  • 1 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tsp chives
  • Salt and pepper

Preparation

  1. In a medium bowl, whisk together the dressing ingredients.

  2. Spiralize celery root using blade C on the Inspiralizer.

  3. Boil the spiralized celery root for 1 minute.

  4. Transfer to a colander, rinse under cold water, and leave to drain.

  5. Toss all ingredients together in a large bowl, add the dressing, and sprinkle with chives before serving.
