Celery Root Salad
Ingredients
- for salad:
- 2 boneless skinless grilled chicken breasts
- 1 celery root, spiralized
- 2 romaine hearts, chopped
- 12 bunches mâche greens (can sub watercress or spinach)
- 1 granny smith apple, 1/2
- juice of 1 lemon
- 3/4 oz. walnuts, chopped
- 1 tsp sea salt
- for dressing:
- 1 tbsp whole grain mustard
- 1 tbsp red wine vinegar
- 2 tbsp extra virgin olive oil
- 1 tsp chives, chopped
- salt and pepper
Preparation
In a medium bowl, whisk together the dressing ingredients
Spiralize celery root (blade C on the Inspiralizer). Boil for 1 minute. Transfer to a colander, rinse under cold water, and leave in colander to drain
