Celery Root Salad with Apples, Walnuts, and Mustard Vinaigrette
Ingredients
Salad
- 2 boneless skinless chicken breasts
- 1 celery root
- 2 romaine hearts
- 12 bunches mâche greens (can sub watercress or spinach)
- 1 Granny Smith apple
- Juice of 1 lemon
- 3/4 oz. walnuts
- 1 tsp sea salt
Dressing
- 1 tbsp whole grain mustard
- 1 tbsp red wine vinegar
- 2 tbsp extra virgin olive oil
- 1 tsp chives
- Salt and pepper
Preparation
In a medium bowl, whisk together the dressing ingredients.
Spiralize celery root using blade C on the Inspiralizer.
Boil the spiralized celery root for 1 minute.
Transfer to a colander, rinse under cold water, and leave to drain.
Toss all ingredients together in a large bowl, add the dressing, and sprinkle with chives before serving.
