Creamy Zucchini Cheese with Optional Herbs

Ingredients

  • 2 cups chopped zucchini or combination of desired vegetables
  • 4 tablespoons grass-fed gelatin
  • 2 tablespoons coconut oil
  • 2 teaspoons lemon juice
  • 3/4 teaspoon sea salt or to taste
  • Optional: garlic and any herbs to taste

Preparation

  1. Steam 2 cups of chopped zucchini in 1/2 cup of water for about five minutes.

  2. Drain the water.

  3. Transfer the steamed zucchini to a blender or food processor.

  4. Add 4 tablespoons grass-fed gelatin, 2 tablespoons coconut oil, 2 teaspoons lemon juice, and about 3/4 teaspoon sea salt or to taste.

  5. Blend until smooth and creamy.

  6. Pour the mixture into a glass bread pan, which can be lined with parchment paper if desired.

  7. Refrigerate to set for at least 3 hours.

  8. Optionally, add garlic and any herbs to flavor it.
