Creamy Zucchini Cheese with Optional Herbs
Ingredients
- 2 cups chopped zucchini or combination of desired vegetables
- 4 tablespoons grass-fed gelatin
- 2 tablespoons coconut oil
- 2 teaspoons lemon juice
- 3/4 teaspoon sea salt or to taste
- Optional: garlic and any herbs to taste
Preparation
Steam 2 cups of chopped zucchini in 1/2 cup of water for about five minutes.
Drain the water.
Transfer the steamed zucchini to a blender or food processor.
Add 4 tablespoons grass-fed gelatin, 2 tablespoons coconut oil, 2 teaspoons lemon juice, and about 3/4 teaspoon sea salt or to taste.
Blend until smooth and creamy.
Pour the mixture into a glass bread pan, which can be lined with parchment paper if desired.
Refrigerate to set for at least 3 hours.
Optionally, add garlic and any herbs to flavor it.
