Cretan Taco-Inspired Salad with Olive Dressing

Ingredients

  • Tomatoes
  • Cucumbers
  • Rocket (arugula)
  • Red onion
  • Black-eyed peas
  • Red pepper
  • Whole grain Cretan barley rusk
  • 1 cup tsakistes olives, rinsed and drained
  • 1 unwaxed lemon
  • 1 tablespoon whole coriander seeds
  • 2 large garlic cloves, sliced
  • Good quality olive oil

Preparation

  1. Put the drained tsakistes olives in a bowl.

  2. Squeeze in the juice from one unwaxed lemon and keep the lemon.

  3. Chop half the lemon and add it to the olives.

  4. Crush 1 tablespoon of whole coriander seeds using a pestle and mortar and add them.

  5. Add 2 sliced large garlic cloves.

  6. Add enough good quality olive oil to coat well and mix together.

  7. Store in an airtight jar in the fridge for up to two weeks; stir before each use.

  8. For the salad, combine tomatoes, cucumbers, rocket, red onion, black-eyed peas, and red pepper.

  9. Serve the salad over a whole grain Cretan barley rusk.

  10. Drizzle with the olive dressing and allow it to soak through.

  11. Adjust ingredients to taste as desired.
