Easy One Pan Roasted Chickpea Vegetables
Ingredients
- avocado oil
- 1/2 cup chickpeas
- 1 sweet potato
- chopped brussel sprouts
- broccoli
- curry powder
- turmeric
- black pepper
- rosemary
- garlic powder
- onion powder
- salt
- chili flakes
Sauce
- 1 tbsp tahini
- 1 tbsp olive oil
- 1.5 tsp Dijon mustard
- 1 tbsp coconut aminos
Preparation
Set oven to 425 degrees Fahrenheit
Preheat sweet potato in microwave for about 6 minutes to soften and speed up cook time
Drizzle avocado oil on a pan
Add chickpeas, sweet potato, chopped brussel sprouts, and broccoli to the pan
Add a little more oil and mix everything with hands to coat well
Add seasonings: curry powder, turmeric, black pepper, rosemary, garlic powder, onion powder, salt, and chili flakes
Cook in oven for about 20 minutes or until lightly browned
Mix tahini, olive oil, Dijon mustard, and coconut aminos well for the sauce
Drizzle the sauce over the cooked dish for extra flavor
