Easy Salmon and Kale Dinner for Two

Ingredients

  • 2 pieces of fresh salmon
  • an entire bunch of kale
  • olive oil
  • salt
  • pepper
  • garlic powder

Preparation

  1. Preheat oven to 350 degrees and cover 2 pans with aluminum foil.

  2. Wash and dry an entire bunch of kale stalks, cut leaves off of stems.

  3. Place all leaves in a large bowl and toss with olive oil, salt, pepper, and garlic powder.

  4. Pour dressed kale onto one pan in a heaping pile and place in oven.

  5. Place 2 pieces of fresh salmon onto the other pan, rub in olive oil, and sprinkle on salt and pepper.

  6. Check and toss the kale around the pan at about the 10 minute mark. At this time add the salmon pan to the oven, and cook both for about another 10 minutes, until kale is just starting to crisp up and turn brown and the salmon is medium rare. If you prefer salmon more well done, cook for another 5 minutes.

  7. Take both pans out, serve salmon and a heaping serving of kale on both plates and enjoy.
