Flavorful Pumpkin Oatmeal Bowl with Toppings
Ingredients
- 1/2 cup fresh pumpkin purée
- 3/4 cup rolled gluten free oats
- 1/2 cup water
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp allspice
- 2 fresh dates, seeded and chopped
Toppings
- blood orange, deconstructed
- blueberries
- pomegranates
- pepitas
- hemp seeds
- 2 chocolate squares enjoylife
Preparation
Preheat oven to 400 degrees.
Cut a small pumpkin in half, drizzle olive oil on a baking sheet, and place cut side down. Cook in oven for 20 minutes or until fork inserted with ease.
Scoop out seeds and discard.
Scoop out pumpkin flesh into a blender and purée until smooth.
Place all ingredients in a saucepan and simmer to desired thickness.
