Flavorful Pumpkin Oatmeal Bowl with Toppings

Ingredients

  • 1/2 cup fresh pumpkin purée
  • 3/4 cup rolled gluten free oats
  • 1/2 cup water
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp allspice
  • 2 fresh dates, seeded and chopped

Toppings

  • blood orange, deconstructed
  • blueberries
  • pomegranates
  • pepitas
  • hemp seeds
  • 2 chocolate squares enjoylife

Preparation

  1. Preheat oven to 400 degrees.

  2. Cut a small pumpkin in half, drizzle olive oil on a baking sheet, and place cut side down. Cook in oven for 20 minutes or until fork inserted with ease.

  3. Scoop out seeds and discard.

  4. Scoop out pumpkin flesh into a blender and purée until smooth.

  5. Place all ingredients in a saucepan and simmer to desired thickness.
