Fried Egg with Roasted Vegetables and Avocado
Ingredients
- 1 egg
- ghee
- zucchini
- avocado oil
- adobo seasoning
- sweet potatoes
- 1/2 avocado
- red pepper flakes
- mushrooms
- peppers
Preparation
Preheat oven to 400F.
Roast sweet potatoes for 20 minutes on each side.
Roast zucchini with avocado oil and adobo seasoning.
Fry 1 egg in ghee.
Sauté mushrooms and peppers in the same oil and ghee.
Serve with 1/2 avocado sprinkled with red pepper flakes.
Note: This meal pairs well with any additional vegetables on hand for variety.
