Fried Egg with Roasted Vegetables and Avocado

Ingredients

  • 1 egg
  • ghee
  • zucchini
  • avocado oil
  • adobo seasoning
  • sweet potatoes
  • 1/2 avocado
  • red pepper flakes
  • mushrooms
  • peppers

Preparation

  1. Preheat oven to 400F.

  2. Roast sweet potatoes for 20 minutes on each side.

  3. Roast zucchini with avocado oil and adobo seasoning.

  4. Fry 1 egg in ghee.

  5. Sauté mushrooms and peppers in the same oil and ghee.

  6. Serve with 1/2 avocado sprinkled with red pepper flakes.

  7. Note: This meal pairs well with any additional vegetables on hand for variety.
