Garlic "Honey" Tofu with Spinach

Ingredients

  • 1 block (450 g) of extra firm tofu or superfirm tofu
  • 1 tbsp cornstarch
  • 1 tbsp nutritional yeast
  • 1/2 tsp lemon pepper
  • Pinch of salt
  • 2 tsp oil or cooking spray
  • 1 1/2 tbsp soy sauce (or coconut aminos for gluten-free option)
  • 1 tbsp agave syrup or your favorite liquid sweetener
  • 1 tbsp mirin
  • 1 tsp garlic chili paste (optional)
  • 1 tbsp apple juice (or 1/4 wedge of lemon juice)
  • 6 cloves garlic, crushed or minced
  • 1/2 inch ginger, minced
  • 2 scallions, sliced
  • 2 handfuls of spinach

Preparation

  1. If using superfirm tofu, simply remove it from the packaging and cut it into even cubes. If using extra firm tofu, drain it and gently press out excess water using a tofu press or by applying equal pressure on each side. Cut the tofu into equal-sized cubes.

  2. In a freezer bag, combine the tofu cubes, cornstarch, nutritional yeast, lemon pepper, and salt. Seal the bag and shake gently to coat the tofu with the mixture.

  3. Heat oil in a pan over medium heat. Add the tofu and cook for 4-5 minutes on one side until golden. Flip the tofu and cook for a few more minutes until golden on the other side.

  4. While the tofu is cooking, prepare the sauce by combining soy sauce, agave syrup, mirin, garlic chili paste (if using), apple juice, garlic, ginger, and scallions.

  5. Remove the tofu from the pan and lower the heat slightly. Add the sauce to the pan and cook for 30 seconds, then return the tofu to the pan along with the spinach. Stir well to allow the spinach to wilt and the tofu to coat itself with the sauce.

  6. Serve the Garlic "Honey" Tofu with extra scallions on top and rice on the side. This recipe yields 4 servings.
