Garlicky Cherry Tomato Pasta
Ingredients
- 250g fusilli pasta
- Handful cherry tomatoes
- 3 cloves garlic
- 1 red chilli or to taste
- Chilli flakes to taste
- Black pepper to taste
- Salt to taste
- 1 tbsp olive oil
- 1 tsp butter
Preparation
Cook the pasta till al dente in salted water. Reserve a cup of pasta water.
Heat butter and oil together, add in the garlic and sauté till golden.
Add in the tomatoes, chillies, chilli flakes and black pepper. Cook for 2-3 minutes.
Add 1/4 cup pasta water, cook for 30 seconds on high flame.
Add in the pasta and more 1/2 cup pasta water. Cook for 3-5 minutes making sure you don’t overcook the pasta.
Adjust the seasoning, sprinkle some Parmesan if you wish. Serve hot!
