Garlicky Cherry Tomato Pasta

Ingredients

  • 250g fusilli pasta
  • Handful cherry tomatoes
  • 3 cloves garlic
  • 1 red chilli or to taste
  • Chilli flakes to taste
  • Black pepper to taste
  • Salt to taste
  • 1 tbsp olive oil
  • 1 tsp butter

Preparation

  1. Cook the pasta till al dente in salted water. Reserve a cup of pasta water.

  2. Heat butter and oil together, add in the garlic and sauté till golden.

  3. Add in the tomatoes, chillies, chilli flakes and black pepper. Cook for 2-3 minutes.

  4. Add 1/4 cup pasta water, cook for 30 seconds on high flame.

  5. Add in the pasta and more 1/2 cup pasta water. Cook for 3-5 minutes making sure you don’t overcook the pasta.

  6. Adjust the seasoning, sprinkle some Parmesan if you wish. Serve hot!
