Gluten Free Vegan Chocolate Protein Granola Bars

Ingredients

  • 2 cups @bobsredmill gf rolled oats
  • 3/4 cup @barneybutter almond butter (the smooth & sweetened one)
  • 1/3 cup @bluediamond unsweetened vanilla almond milk
  • 2 tbsp black chia seeds
  • 1/2 cup @gardenoflife vegan chocolate protein powder
  • 3 tbsp @nutilight vegan & 0 sugar chocolate hazelnut spread (for topping)

Preparation

  1. Preheat oven to 350 degrees

  2. Mix 2 tbsp of chia seeds with 5 tbsp water. Let sit 1 min

  3. Melt the almond butter in the microwave until it’s runny (30s-1 min)

  4. Mix together the oats, almond butter, protein powder, almond milk, chia “egg”

  5. Spray a baking pan with coconut oil

  6. Press the mixture flat into the baking pan

  7. Bake for about 20 min, but I would keep checking it

  8. Once cooled, melt 3 tbsp nutilight chocolate hazelnut spread in the microwave (20s)

  9. Spread the chocolate on top and let dry
