Easy Grain-Free Pumpkin Porridge Dish

Ingredients

  • 1 tablespoon almond meal
  • 1 tablespoon pistachio meal
  • 1 cup almond milk
  • 1/2 cup pumpkin purée
  • Coconut sugar
  • Pinch of cinnamon
  • Pinch of nutmeg
  • Splash of vanilla

Toppings

  • pepitas
  • Coconut
  • dairy-free chocolate chips

Preparation

  1. Combine almond milk and nut meals.

  2. Stir and cook until thick.

  3. Whisk in pumpkin purée, coconut sugar, cinnamon, nutmeg, and vanilla.

  4. Add your favorite sprinkles or toppings.

Tips

  1. You could replace the nut meal with chia or flaxmeal, but the result may be a very gluey porridge because it creates a chia egg or flax egg. It won't be bad though.

  2. This recipe is also paleo friendly.
