Healthy Pumpkin Spice Latte Drink

Ingredients

  • 16 ounces coffee (iced or hot)
  • 1/2 cup full-fat coconut milk
  • 1 to 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons pure vanilla extract
  • dash of ground nutmeg, for garnish (optional)

Preparation

  1. Combine all the ingredients in a blender with 1 teaspoon of the pumpkin pie spice and blend on high until well incorporated.

  2. Taste and add more pumpkin pie spice if desired, and pulse to combine.

  3. Serve in coffee cups.

  4. For an iced version, use chilled coffee and pour over a glass full of ice.

  5. Note: If blending hot coffee, keep the blender only half full or less to prevent a kitchen explosion.
