Homemade Maple Granola with Superfoods
Ingredients
- 3/4 cup coconut oil
- 1/2 cup maple syrup
- 1 tsp cinnamon
- 1 tsp vanilla
- 4 cups oats
- 3 tbsp chia seeds
- 2 tbsp hemp seeds
- 1/3 cup pepitas (pumpkin seeds)
- 1/3 cup sunflower seeds
- 1/3 cup shredded coconut
- handful of goji berries
- cacao nibs
Preparation
In a saucepan on medium heat, combine the coconut oil, maple syrup, cinnamon, and vanilla, and heat until the coconut oil melts, then remove from heat.
In a large bowl, combine the oats, chia seeds, hemp seeds, pepitas, sunflower seeds, and shredded coconut.
Pour the coconut oil and syrup mixture into the bowl and mix well.
Spread the mixture evenly onto a large baking sheet and bake at 325 degrees for 25-30 minutes.
Let it cool for at least 10 minutes before breaking it up.
Add a handful of goji berries and cacao nibs afterwards.
Note: This granola is easy to make and healthier than store-bought versions, packed with superfoods.
