Nut-Free Bean-Free Hummus with Zucchini and Peppers

Ingredients

  • 1/2 cup zucchini (chopped)
  • 1/2 cup red bell pepper (chopped)
  • 1/3 cup tahini
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1/4 tsp sea salt
  • 1/4 tsp cumin powder
  • Optional: Smoked or regular Paprika for red color

Preparation

  1. Do not peel the zucchini to retain nutrients.

  2. Place all ingredients in a food processor.

  3. Blend until smooth.

  4. Enjoy!
