Nut-Free Bean-Free Hummus with Zucchini and Peppers
Ingredients
- 1/2 cup zucchini (chopped)
- 1/2 cup red bell pepper (chopped)
- 1/3 cup tahini
- 2 tbsp lemon juice
- 1 clove garlic
- 1/4 tsp sea salt
- 1/4 tsp cumin powder
- Optional: Smoked or regular Paprika for red color
Preparation
Do not peel the zucchini to retain nutrients.
Place all ingredients in a food processor.
Blend until smooth.
