Indian Salmon Spicy Fish Cakes

Ingredients

  • 300 g cooked salmon
  • 3 boiled potatoes
  • 1 small onion finely chopped
  • 1/2 cup chopped coriander
  • 1 tbsp chopped mint
  • 1 tbsp garam masala or tandoori masala
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • salt to taste
  • 2 tbsp cornstarch
  • for coating:
  • 2 eggs lightly beaten
  • 1 cup panko bread crumbs

Preparation

  1. To cook salmon, preheat the oven to 190 degrees celsius

  2. Bake for 20-25 minutes or till the salmon flakes out easily

  3. Or use leftover cooked salmon or canned salmon

  4. Mix salmon, boiled potatoes, onions and all the other ingredients with all the spice powders

  5. Make round cakes and coat them with egg, then breadcrumbs, again egg and breadcrumbs for the second time

  6. Shallow fry in oil till it’s golden brown

  7. Serve with dill coriander dressing
