Indian-Style Yellow Rice Salad

Ingredients

  • 300 gr. brown rice
  • 100 gr. pomegranate seeds
  • 250 gr. lima beans
  • 1 onion
  • 2 cloves of garlic
  • Fresh parsley
  • 1/2 lime
  • 3 tbsp olive oil
  • 2 tbsp turmeric
  • Pepper & salt

Optional

  • plant-based yogurt
  • spring onion

Preparation

  1. Cook the brown rice with turmeric, salt, and water until tender

  2. Chop the onion, garlic, and parsley finely

  3. If lima beans are not pre-cooked, prepare them according to package instructions; otherwise, drain and rinse if canned

  4. In a pan, heat 1 tablespoon of olive oil and sauté the chopped onion and garlic until soft and fragrant

  5. In a large bowl, combine the cooked rice, sautéed onion and garlic mixture, lima beans, pomegranate seeds, and chopped parsley

  6. Add the juice from 1/2 lime, remaining olive oil, pepper, and salt to taste, then mix well

  7. Optionally, stir in plant-based yogurt and chopped spring onion for added creaminess and flavor

  8. Serve warm as a side dish
