Indian-Style Yellow Rice Salad
Ingredients
- 300 gr. brown rice
- 100 gr. pomegranate seeds
- 250 gr. lima beans
- 1 onion
- 2 cloves of garlic
- Fresh parsley
- 1/2 lime
- 3 tbsp olive oil
- 2 tbsp turmeric
- Pepper & salt
Optional
- plant-based yogurt
- spring onion
Preparation
Cook the brown rice with turmeric, salt, and water until tender
Chop the onion, garlic, and parsley finely
If lima beans are not pre-cooked, prepare them according to package instructions; otherwise, drain and rinse if canned
In a pan, heat 1 tablespoon of olive oil and sauté the chopped onion and garlic until soft and fragrant
In a large bowl, combine the cooked rice, sautéed onion and garlic mixture, lima beans, pomegranate seeds, and chopped parsley
Add the juice from 1/2 lime, remaining olive oil, pepper, and salt to taste, then mix well
Optionally, stir in plant-based yogurt and chopped spring onion for added creaminess and flavor
Serve warm as a side dish
