Light Dinner with Kohlrabi Beetroot and Peanut Sauce
Ingredients
- Kohlrabi
- Beet root
- Peanuts
Peanut sauce
- 2 tsp peanut butter
- 1/2 tsp low sodium soy sauce
- 1/4 tsp vinegar
- 1/4 tsp lemon juice
- 1/4 tsp grated ginger
- 1 small minced garlic clove
- 2 tbsp warm water
Preparation
Finely slice the kohlrabi and beet root.
Mix all the peanut sauce ingredients together: 2 tsp peanut butter, 1/2 tsp low sodium soy sauce, 1/4 tsp vinegar, 1/4 tsp lemon juice, 1/4 tsp grated ginger, 1 small minced garlic clove, and 2 tbsp warm water.
Drizzle the peanut sauce over the vegetables.
Add some peanuts on top.
