Light Dinner with Kohlrabi Beetroot and Peanut Sauce

Ingredients

  • Kohlrabi
  • Beet root
  • Peanuts

Peanut sauce

  • 2 tsp peanut butter
  • 1/2 tsp low sodium soy sauce
  • 1/4 tsp vinegar
  • 1/4 tsp lemon juice
  • 1/4 tsp grated ginger
  • 1 small minced garlic clove
  • 2 tbsp warm water

Preparation

  1. Finely slice the kohlrabi and beet root.

  2. Mix all the peanut sauce ingredients together: 2 tsp peanut butter, 1/2 tsp low sodium soy sauce, 1/4 tsp vinegar, 1/4 tsp lemon juice, 1/4 tsp grated ginger, 1 small minced garlic clove, and 2 tbsp warm water.

  3. Drizzle the peanut sauce over the vegetables.

  4. Add some peanuts on top.
