Loaded Umami Bean Soup

Ingredients

  • 1/2 onion
  • 1 red bell pepper
  • 3 garlic cloves
  • 2 tsp cumin seeds
  • 1 adobo pepper
  • 1 jalapeño
  • 1 tbsp tomato paste
  • 1/2 c white wine
  • 30 oz black beans
  • 3 tbsp brown rice syrup
  • 2 qt veggie stock
  • 1 lime
  • pinch of salt
  • pinch of cilantro

Preparation

  1. In a large pot, sauté the onion, red bell pepper, garlic, adobo pepper, and jalapeño until softened.

  2. Add cumin seeds and tomato paste, cooking for 1-2 minutes to release flavors.

  3. Pour in white wine to deglaze the pot, scraping up any browned bits.

  4. Add black beans, brown rice syrup, and veggie stock. Bring to a boil, then reduce heat and simmer for 20-30 minutes.

  5. Stir in lime juice, salt, and cilantro, then remove from heat and serve.
