Loaded Umami Bean Soup
Ingredients
- 1/2 onion
- 1 red bell pepper
- 3 garlic cloves
- 2 tsp cumin seeds
- 1 adobo pepper
- 1 jalapeño
- 1 tbsp tomato paste
- 1/2 c white wine
- 30 oz black beans
- 3 tbsp brown rice syrup
- 2 qt veggie stock
- 1 lime
- pinch of salt
- pinch of cilantro
Preparation
In a large pot, sauté the onion, red bell pepper, garlic, adobo pepper, and jalapeño until softened.
Add cumin seeds and tomato paste, cooking for 1-2 minutes to release flavors.
Pour in white wine to deglaze the pot, scraping up any browned bits.
Add black beans, brown rice syrup, and veggie stock. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
Stir in lime juice, salt, and cilantro, then remove from heat and serve.
