Low FODMAP Carrot Cake Chia Pudding

Ingredients

  • 200ml plant-based milk (almond, rice, or macadamia)
  • 20g chia seeds
  • one medium carrot
  • dash of cinnamon
  • pinch of fresh vanilla
  • stevia or maple syrup
  • pecans
  • coconut

Preparation

  1. Combine 200ml plant-based milk with 20g chia seeds.

  2. Allow to sit for about 10 minutes and then stir again.

  3. Refrigerate overnight.

  4. The next day, grate one medium carrot and combine it with the chia pudding.

  5. Add a dash of cinnamon, a pinch of fresh vanilla, and either stevia or maple syrup.

  6. Top with some pecans and coconut.
