Mango Chia Pudding


  • 2 tablespoons chia seeds
  • 1/2 cup chopped mango
  • 1/3 cup coconut milk (or non-dairy milk of choice)
  • 3 tablespoons non-dairy milk
  • 1 tbsp of pumpkin seed


  1. Puree mango and milks together in a blender

  2. Pour into serving container and stir in chia seeds

  3. Let sit 3 hours up to overnight in the refrigerator to set

  4. Serve topped with more fresh mango and pumpkin seeds
