No-Bake Banana Coconut Pie
Ingredients
Crust
- 1 cup rolled oats
- 1/2 cup walnuts
- 3 tbsp melted butter
- 2 tbsp maple syrup
- pinch of salt
Filling
- 3 ripe bananas
- 1 cup coconut milk
- 1 tbsp corn starch
- 1 tsp vanilla
- 1 tbsp maple syrup
Topping
- 1 can of chilled coconut cream
- 1 tbsp monk fruit
- sliced banana
Preparation
Blend the crust ingredients together, press into a greased pie pan, and freeze.
Mash the bananas, mix with the remaining filling ingredients, pour over the frozen base, and freeze for 2 hours.
Beat the coconut cream with monk fruit, spread over the frozen pie, top with sliced bananas, and keep in the freezer until ready to serve.
