No-Bake Banana Coconut Pie

Ingredients

Crust

  • 1 cup rolled oats
  • 1/2 cup walnuts
  • 3 tbsp melted butter
  • 2 tbsp maple syrup
  • pinch of salt

Filling

  • 3 ripe bananas
  • 1 cup coconut milk
  • 1 tbsp corn starch
  • 1 tsp vanilla
  • 1 tbsp maple syrup

Topping

  • 1 can of chilled coconut cream
  • 1 tbsp monk fruit
  • sliced banana

Preparation

  1. Blend the crust ingredients together, press into a greased pie pan, and freeze.

  2. Mash the bananas, mix with the remaining filling ingredients, pour over the frozen base, and freeze for 2 hours.

  3. Beat the coconut cream with monk fruit, spread over the frozen pie, top with sliced bananas, and keep in the freezer until ready to serve.
