Quinoa Brittle

  • 1/2 cup uncooked quinoa
  • 3/4 cup raw pecans (or sub more quinoa/oats for a nut free version)
  • 1/4 cup rolled oats (gluten-free if desired)
  • 2 t chia seeds
  • 2 t coconut sugar (i subbed organic cane sugar)
  • pinch of sea salt
  • 2 t coconut oil (i used vegan butter instead)
  • 1/2 cup maple syrup


  1. Combine all ingredients in a bowl and pour onto a baking sheet lined with parchment paper

  2. Bake at 325 degrees for 15 minutes

  3. Rotate pan and bake another 5-10 minutes until golden brown

  4. Watch closely to avoid burning

  5. Let cool completely before breaking into pieces

  6. Place in mason jars and tie with a bow
