Quinoa Brittle
Ingredients

- 1/2 cup uncooked quinoa
- 3/4 cup raw pecans (or sub more quinoa/oats for a nut free version)
- 1/4 cup rolled oats (gluten-free if desired)
- 2 t chia seeds
- 2 t coconut sugar (i subbed organic cane sugar)
- pinch of sea salt
- 2 t coconut oil (i used vegan butter instead)
- 1/2 cup maple syrup
Preparation
Combine all ingredients in a bowl and pour onto a baking sheet lined with parchment paper
Bake at 325 degrees for 15 minutes
Rotate pan and bake another 5-10 minutes until golden brown
Watch closely to avoid burning
Let cool completely before breaking into pieces
Place in mason jars and tie with a bow
