Ratatouille

Ingredients

  • 1/2 cup of quinoa
  • 2 tsp olive oil
  • 2 cloves of garlic
  • 1 cup of chopped yellow onion
  • 1/2 cup of sliced black olives (we used nicosie and kalamata olives)
  • 1/2 cup of chopped shittake mushroom
  • 1/2 tsp of dried oregano
  • 1 cup of chopped zuccini
  • 1 cup of chopped red pepper
  • 1 cup of chopped green pepper
  • 1 cup of sliced tomato
  • 1 tbs of chopped basil
  • 1 tbs of chopped parsely
  • 1 tsp pink himalayan salt
  • 1/2 tsp of black pepper

Preparation

  1. Cook quinoa in small pot and set aside

  2. Pour olive oil into a large skillet on medium heat, add onion and garlic, cook until onions are translucent, about 5 minutes

  3. Add olives, mushrooms, and oregano, cook until mushrooms are tender, about another 5 minutes

  4. Next add zucchini and bell peppers to skillet and cook until tender about 10 minutes

  5. Then turn off heat and add tomato, basil, and parsely and stir well

  6. Mix in quinoa and seasonings

  7. Garnish with leftover chopped herbs, fresh cracked black pepper, and enjoy ???? #threebunnies
