Raw Portobello Salad with Tomato Dressing

Ingredients

Salad base

  • 1 large portobello
  • 1 cup of organic baby spinach
  • 1/2 sweet onion
  • 3-4 sundried tomatoes
  • red radish sprouts

Tomato dressing

  • 1 medium tomato
  • 1/2 raw avocado
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic
  • 1 teaspoon celtic salt
  • 1 teaspoon fresh cracked mixed pepper
  • 1 teaspoon Hungarian paprika

Preparation

  1. Place the dressing ingredients in a blender and blend until mixed.

  2. Place the spinach on a dinner plate, top with the onion, sundried tomatoes, sliced portobello, and radish sprouts, then add the dressing on top.
