Roasted Vegetable Buddha Bowl

Ingredients

  • Chickpeas
  • Cucumber

  • Seeded sourdough roll
  • Mixed salad leaves
  • Sweetcorn

Roasted vegetables

  • Aubergine
  • Red pepper
  • Butternut squash

Dressings and seasonings

  • Avocado oil
  • Smoked salt flakes
  • Black pepper
  • Smokey bbq crunch
  • Blue cheese dressing

Preparation

  1. Roast aubergine, red pepper, and butternut squash in avocado oil and smoked salt flakes.

  2. Assemble the bowl with chickpeas, cucumber, baby tomatoes, seeded sourdough roll, mixed salad leaves, sweetcorn, and edamame beans.

  3. Dress the bowl with avocado oil, black pepper, smokey bbq crunch, and a drizzle of blue cheese dressing.
