Simple Carrot Pesto with Pine Nuts and Cheese
Ingredients
- 165g or 3 small carrots
- 1 medium onion
- 3 cloves of garlic
- 1 or to taste red chilli
- 100ml olive oil
- 25g pine nuts
- 25g cashew nuts
- 50g parmesan cheese
- Cracked black pepper to taste
- Salt to taste
Preparation
Heat 1 tablespoon olive oil, add onion and carrots, and sauté for 2-3 minutes.
Add garlic, cover the pan, and steam for 3-5 minutes.
Once cooled, add carrots and all ingredients to a food processor and blend while adding olive oil.
Store in the refrigerator for up to 10 days.
