Simple Carrot Pesto with Pine Nuts and Cheese

Ingredients

  • 165g or 3 small carrots
  • 1 medium onion
  • 3 cloves of garlic
  • 1 or to taste red chilli
  • 100ml olive oil
  • 25g pine nuts
  • 25g cashew nuts
  • 50g parmesan cheese
  • Cracked black pepper to taste
  • Salt to taste

Preparation

  1. Heat 1 tablespoon olive oil, add onion and carrots, and sauté for 2-3 minutes.

  2. Add garlic, cover the pan, and steam for 3-5 minutes.

  3. Once cooled, add carrots and all ingredients to a food processor and blend while adding olive oil.

  4. Store in the refrigerator for up to 10 days.
