Simple Chickpea Noodles


  • 2 servings vegan noodles of choice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp tamari
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp balsamic vinegar
  • 3 tbsp water
  • 2 tsp cornflour
  • 2-3 tbsp sesame seeds


  1. Cook the noodles according to packaging instructions

  2. Meanwhile, add the onion and garlic to a non-stick frying pan and sauté for 2-3 minutes, until softened

  3. Add the bell pepper together with the chickpeas, cooking for a further 2-3 minutes, until the pepper starts to soften

  4. Meanwhile, prepare the sauce by stirring together the tamari, apple cider vinegar, maple syrup, balsamic vinegar, water and cornflour

  5. Drain and rinse and noodles and transfer them to the frying pan together with the sauce

  6. Toss the noodles with the rest of the ingredients and stir until the sauce is thick and coats the noodles evenly

  7. Stir in the sesame seeds at the last minute before serving
