Spicy Cashew Tofu
Ingredients
- 1 pack firm tofu, drained well & cubed, shallow pan fry until golden brown or use store bought local fried tofu cut into cubes (2cups)
- 1 medium onion - sliced
- 3 cloves garlic - sliced
- 5-6 dried chili - boiled in hot water until soft
- 1/2 cup diced green bell pepper
- 1/4 cup scallions - cut into matchsticks long
- 1/2 dry roasted cashews
- ~ oil, salt to taste
- Sauce:
- 1 tablespoon soy sauce
- 2 teaspoons dark soy sauce
- 2 teaspoons @leekumkeeusa stir fry sauce
- 1/2 teaspoons organic brown sugar
- 1/2 teaspoon salt

Preparation
Cornstarch mixture: Mix 1 tablespoons corn starch with 3 tablespoons water until well combined
Set aside, stir again before use
In a heated non-stick pan with 2 teaspoons oil, saute onion until soft, then add garlic and continue to stir until garlic turns lightly brown
Add bell pepper, prepared tofu, chili and sauce
Coat them well and season with salt, if needed
Stir in cornstarch and turn off heat
Serve warm with your favorite grain and veggies
