Spicy Cashew Tofu Stir-Fry

Ingredients

  • 2 cups fried tofu cubes
  • 1 medium onion
  • 3 cloves garlic
  • 5-6 dried chili
  • 1/2 cup diced green bell pepper
  • 1/4 cup scallions
  • 1/2 cup dry roasted cashews
  • Oil, as needed
  • Salt, to taste

Sauce

  • 1 tablespoon soy sauce
  • 2 teaspoons dark soy sauce
  • 2 teaspoons stir fry sauce
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon salt
  • pinch of white pepper

Cornstarch mixture

  • 1 tablespoon cornstarch
  • 3 tablespoons water

Preparation

  1. Boil the dried chili in hot water until soft

  2. Fry the tofu cubes until golden brown

  3. Mix the sauce ingredients together in a bowl

  4. Mix 1 tablespoon cornstarch with 3 tablespoons water until well combined and set aside.

  5. Heat a non-stick pan with 2 teaspoons oil and saute onion until soft.

  6. Add garlic and stir until lightly brown.

  7. Add bell pepper, prepared tofu, prepared chili, and the sauce; coat well.

  8. Season with salt if needed.

  9. Stir in the cornstarch mixture and turn off heat.

  10. Serve warm with your favorite grain and veggies.
