Spicy Cashew Tofu Stir-Fry
Ingredients
- 2 cups fried tofu cubes
- 1 medium onion
- 3 cloves garlic
- 5-6 dried chili
- 1/2 cup diced green bell pepper
- 1/4 cup scallions
- 1/2 cup dry roasted cashews
- Oil, as needed
- Salt, to taste
Sauce
- 1 tablespoon soy sauce
- 2 teaspoons dark soy sauce
- 2 teaspoons stir fry sauce
- 1/2 teaspoon brown sugar
- 1/2 teaspoon salt
- pinch of white pepper
Cornstarch mixture
- 1 tablespoon cornstarch
- 3 tablespoons water
Preparation
Boil the dried chili in hot water until soft
Fry the tofu cubes until golden brown
Mix the sauce ingredients together in a bowl
Mix 1 tablespoon cornstarch with 3 tablespoons water until well combined and set aside.
Heat a non-stick pan with 2 teaspoons oil and saute onion until soft.
Add garlic and stir until lightly brown.
Add bell pepper, prepared tofu, prepared chili, and the sauce; coat well.
Season with salt if needed.
Stir in the cornstarch mixture and turn off heat.
Serve warm with your favorite grain and veggies.
