Stokes Purple

Ingredients

  • 1/4 cup cooked, mashed, chilled Frieda’s Stokes Purple® sweet potatoes
  • 2 tablespoons nut butter of choice
  • 1/2 teaspoon cinnamon
  • 8 @jooliesdates , pitted
  • chopped walnuts for topping

Preparation

  1. In a small bowl, mix together the mashed Stokes Purple® sweet potatoes, nut butter and cinnamon until thoroughly combined

  2. Take 1/2 tablespoon of the purple sweet potato mixture and stuff each date

  3. Top with chopped walnuts
