Gluten Free Vegan Chocolate Protein Granola Bars
Ingredients
- 2 cups @bobsredmill gf rolled oats
- 3/4 cup @barneybutter almond butter (the smooth & sweetened one)
- 1/3 cup @bluediamond unsweetened vanilla almond milk
- 2 tbsp black chia seeds
- 1/2 cup @gardenoflife vegan chocolate protein powder
- 3 tbsp @nutilight vegan & 0 sugar chocolate hazelnut spread (for topping)
Preparation
Preheat oven to 350 degrees
Mix 2 tbsp of chia seeds with 5 tbsp water. Let sit 1 min
Melt the almond butter in the microwave until it’s runny (30s-1 min)
Mix together the oats, almond butter, protein powder, almond milk, chia “egg”
Spray a baking pan with coconut oil
Press the mixture flat into the baking pan
Bake for about 20 min, but I would keep checking it
Once cooled, melt 3 tbsp nutilight chocolate hazelnut spread in the microwave (20s)
Spread the chocolate on top and let dry
