Sweet and Sour Stir Fry with Tamari Tofu

Ingredients

Tofu

  • 1 block extra firm tofu
  • 1-2 tablespoons avocado oil
  • 1 tablespoon tamari

Sauce

  • 1.5 cups water
  • 1 heaping tablespoon corn starch
  • 2 tablespoons tamari
  • 1 tablespoon coconut sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha
  • 1 tablespoon tomato paste

Vegetables and fruit

  • 1 head broccoli florets
  • Red and yellow peppers
  • 1-2 scallions
  • 1 or more cups pineapple and/or mango
  • Brown rice

Preparation

  1. Press the tofu by wrapping it in a clean kitchen towel, placing it between two cutting boards, and putting a heavy object on top for 30 minutes to an hour.

  2. Cut the tofu into pieces and pan fry in oil over medium heat until crispy on all sides.

  3. Add a splash of tamari to the tofu, stir for another minute, and set aside.

  4. Add washed broccoli florets and cut peppers to a wok or pan with a splash of water, cover with a lid, and sauté or steam for a few minutes.

  5. Mix all ingredients for the sauce and add it to the vegetable mixture, then bring to a boil.

  6. Add the fruit and chopped scallion, and let simmer for a couple more minutes.

  7. Serve with rice and the prepared tofu.
