Sweet and Sour Stir Fry with Tamari Tofu
Ingredients
Tofu
- 1 block extra firm tofu
- 1-2 tablespoons avocado oil
- 1 tablespoon tamari
Sauce
- 1.5 cups water
- 1 heaping tablespoon corn starch
- 2 tablespoons tamari
- 1 tablespoon coconut sugar
- 1 tablespoon rice vinegar
- 1 tablespoon sriracha
- 1 tablespoon tomato paste
Vegetables and fruit
- 1 head broccoli florets
- Red and yellow peppers
- 1-2 scallions
- 1 or more cups pineapple and/or mango
- Brown rice
Preparation
Press the tofu by wrapping it in a clean kitchen towel, placing it between two cutting boards, and putting a heavy object on top for 30 minutes to an hour.
Cut the tofu into pieces and pan fry in oil over medium heat until crispy on all sides.
Add a splash of tamari to the tofu, stir for another minute, and set aside.
Add washed broccoli florets and cut peppers to a wok or pan with a splash of water, cover with a lid, and sauté or steam for a few minutes.
Mix all ingredients for the sauce and add it to the vegetable mixture, then bring to a boil.
Add the fruit and chopped scallion, and let simmer for a couple more minutes.
Serve with rice and the prepared tofu.
