Sweet Version of Sushi Donuts

Ingredients

  • 3 cups cooked sushi or sticky rice
  • 1/2 cup of the white cream from a can of coconut milk - if you live somewhere warm then put it in the fridge overnight before you open it
  • 3 tbsp sugar

Preparation

  1. In a small pan warm the coconut cream and sugar until the sugar has dissolved. Stir this into your still hot rice - you might not need quite all of it so use your judgement. The rice will absorb much of the liquid as it cools. Stir from time to time to help it cool and if you are very clever you will be able to fan it at the same time

  2. Press the rice into silicone donut moulds which have been greased with coconut oil. I used mini moulds, if you use large one then you will only need one per person as they are very filling

  3. Garnish with fruit of your choice. Mango goes especially well with sticky rice! -
