Vegan Chick'n Caesar Salad
Ingredients
- bite-size soy strips
- sun dried tomatoes
- fresh garlic
- crunchy lettuce
- spinach
- avo slices
- nutritional yeast
- seeds
- 3 tbsp vegan mayo
- 1 tsp light soy sauce
- 2 tbsp fresh lemon juice
- small pinch of salt
- generous grinding of black pepper
- 1 tsp garlic puree
- 1/4 tsp Dijon mustard
Preparation
Fry bite-size soy strips with sun dried tomatoes and fresh garlic.
Whisk together the dressing ingredients: 3 tbsp vegan mayo, 1 tsp light soy sauce, 2 tbsp fresh lemon juice, a small pinch of salt, a generous grinding of black pepper, 1 tsp garlic puree, and 1/4 tsp Dijon mustard.
Toss the fried mixture over a bed of crunchy lettuce, spinach, and avocado slices.
Drizzle with the prepared dressing.
Sprinkle with nutritional yeast and seeds for extra crunch.
