Vegan Chick'n Caesar Salad

Ingredients

  • bite-size soy strips
  • sun dried tomatoes
  • fresh garlic
  • crunchy lettuce
  • spinach
  • avo slices
  • nutritional yeast
  • seeds
  • 3 tbsp vegan mayo
  • 1 tsp light soy sauce
  • 2 tbsp fresh lemon juice
  • small pinch of salt
  • generous grinding of black pepper
  • 1 tsp garlic puree
  • 1/4 tsp Dijon mustard

Preparation

  1. Fry bite-size soy strips with sun dried tomatoes and fresh garlic.

  2. Whisk together the dressing ingredients: 3 tbsp vegan mayo, 1 tsp light soy sauce, 2 tbsp fresh lemon juice, a small pinch of salt, a generous grinding of black pepper, 1 tsp garlic puree, and 1/4 tsp Dijon mustard.

  3. Toss the fried mixture over a bed of crunchy lettuce, spinach, and avocado slices.

  4. Drizzle with the prepared dressing.

  5. Sprinkle with nutritional yeast and seeds for extra crunch.
