Vegan Coffee Smoothie with Cashew Milk

Ingredients

  • 10 cashews, soaked for 1 hour
  • 1 date
  • 1 over-ripe banana
  • 1 teaspoon coffee powder
  • 2 tablespoons raw oats
  • 1/2 cup water
  • A few ice cubes

Optional additions

  • Chia seeds
  • Cashews

Preparation

  1. Soak 10 cashews in water for 1 hour.

  2. Blend the soaked cashews and 1 date with the soaking water until smooth to create cashew milk.

  3. Add 1 over-ripe banana, 1 teaspoon coffee powder, 2 tablespoons raw oats, 1/2 cup water, and a few ice cubes to the cashew milk.

  4. Blend all ingredients together until smooth to make the smoothie.

Serving suggestions

  1. Add some chia seeds and cashews when serving, along with more ice cubes for extra benefit.
