Vegan Gingerbread Loaf with Date Caramel
Ingredients
Loaf
- 1.5 cups all purpose flour
- 1/2 cup sugar
- 1/4 cup molasses
- 3.5 teaspoons pumpkin pie spice
- 1 cup nut milk
- 1 tablespoon apple cider vinegar
- 1/4 cup oil
- 1 teaspoon baking powder
- 3/8 teaspoon baking soda
- A handful of candied ginger, finely chopped
- Pinch of salt
- 1/2 teaspoon vanilla extract
Caramel
- 1 cup pitted dates
- 3 tablespoons almond butter
- 1/4 cup coconut milk
- Pinch of salt
- 1/2 teaspoon vanilla
- 2-3 chunks of candied ginger
Preparation

Preheat oven to 350°F
Set aside the nut milk and apple cider vinegar mixture for 5 minutes to create buttermilk.
Sieve the dry ingredients.
Combine molasses, sugar, and vanilla extract.
Gradually add the milk mixture and dry ingredients to the molasses mixture and stir in the chopped candied ginger.
Pour the entire mixture into a greased loaf pan and bake for 40-45 minutes.
Caramel
Blend all ingredients in a high-powered blender until creamy.
