Vegan Nachos with Sweet Potato Chips
Ingredients
- 3 small sweet potatoes
- 2 tbsp olive oil
- 1 plantain
- 1 tsp avocado oil
- 1 tsp chili lime seasoning
- Avocado
- Tomato
- Onion
- Vegan Queso
Preparation
Preheat oven to 425F.
Slice sweet potatoes into thin coins and toss in olive oil.
Bake for 30 minutes, tossing halfway through.
Broil at the end to get them a little crispy.
Slice plantain into coins and coat with avocado oil and chili lime seasoning.
Preheat air fryer to 350F and cook plantain chips for 7-8 minutes, flip, then cook for another 7-8 minutes.
Assemble nachos with sweet potato chips, plantain chips, avocado, tomato, onion, and vegan queso.
