Vegan Peanut Butter Pumpkin Pancakes

Ingredients

  • 1 banana (mashed)
  • 2T @bobsredmill ground flaxseed meal
  • 1c @pereggourmet oat (multi-purpose) flour
  • 4T @lakanto PB powder (sweetened w/ Monk fruit)
  • 2T pumpkin purée
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 tsp baking powder
  • 1 1/3c of almond milk

Toppings

  • @traderjoes creamy almond butter
  • TJ organic roasted coconut granola
  • vegan @enjoylifefoods dark chocolate chips

Preparation

  1. Mash the banana in a bowl

  2. In a separate bowl, combine the dry ingredients: flaxseed meal, oat flour, PB powder, cinnamon, baking powder, and vanilla extract

  3. Add the pumpkin purée and almond milk to the dry ingredients and mix until a smooth batter forms

  4. Heat a griddle or non-stick pan over medium heat and lightly grease if necessary

  5. Pour batter onto the griddle to form pancakes and cook until bubbles appear on the surface, then flip and cook until golden brown

  6. Remove from heat and top with almond butter, coconut granola, and dark chocolate chips
